Chanterelle sandwiches over an open fire – the most flavorful outdoor food of autumn


The stillness of the forest and the warmth of the fire. The quiet of the forest, a crackling fire, and the aroma of butter meeting chanterelles – this is the ultimate autumn experience. On the outdoor pan, golden mushrooms and crispy bread transform into something deeper than just food: it becomes a ritual, a pause from everyday life, a moment when the hunter or nature enthusiast feels at home. 


Cooking chanterelle sandwiches outdoors not only creates fantastic flavors but also an authentic experience – where you are both chef, forager, and a part of nature at the same time.


Recipe for 2 people


Ingredients:

  • 2 slices of rustic sourdough bread or levain
  • 200–250 g fresh chanterelles
  • 100 ml heavy cream
  • 1 tsp concentrated stock (preferably truffle stock)
  • 15 g butter for the mushrooms + extra butter for the bread
  • 15 g freshly grated Parmesan
  • Salt and black pepper
  • 1 handful fresh arugula
  • 1 Swedish apple, diced

Instructions:

1. Prepare the bread – Heat a frying pan over the fire. Add a generous knob of butter and fry the bread slices until golden and crispy at the edges.

2. Sauté the chanterelles – Clean the mushrooms thoroughly. Place them in the dry pan and fry until all liquid has evaporated. Add butter and let the mushrooms develop a nice color.

3. Make the sauce – Pour in the cream and stir in the stock. Let simmer for a couple of minutes until the sauce thickens slightly. Season with salt and pepper. Grate in Parmesan and stir well.

4. Assemble the sandwiches – Place the butter-fried bread slices on plates and top with the creamy chanterelle mixture.


Serve – Add a salad of arugula and diced apple on the side. Drizzle with a little olive oil if you like. Finish the sandwiches with extra Parmesan – because you deserve it.
